We used rockmelons. Any large fruit would do though. Pumpkins would be good, for example. The point is, all fruit is soft and easy to cut. This allows the student to practise good cutting technique without having to put much force into the cut. When your technique is very accurate, you can try harder targets, such as bamboo.
If you do use a carbon steel sword for cutting, make sure you clean the blade with meths and reoil it after about ten minutes of cutting time. Fruit is very acidic and will damage your blade if you don't keep cleaning it off.
